Pinot noir
Pinot Noir is one of the three grape varieties used in the production of champagne wines. During the harvest, the grapes are pressed gently and quickly. The pressure is stopped before the skin, which contains the colour, adds this colour to the juice.
This black grape with white juice is mostly to be found around the Montagne de Reims and the Côte des Bar.
It gives the wines their aromas of red berries and provides body and power.
But champagne is a blended wine. Two other varieties are used to make it: Pinot Meunier and Chardonnay.
One famous champagne made with just one grape variety is produced in the region, the blanc de blanc made exclusively with Chardonnay.
