Champagne corks

In the shape of a champagne cork and wrapped in thin and colourful aluminium foil, these chocolates melt in your mouth and release a Marc de Champagne liqueur contained in a thin sugar shell. They can also be filled with praline or a chocolate ganache.

First of all, the crystallised sugar shell is made. Inside this is the liqueur (the marc). Then, the shell full of liqueur is coated with melted chocolate. At this stage, the cork is drained and cooled so that it hardens.
