Due to its climate, the Champagne region isn’t well-suited to organic cultivation. Indeed, the pervasive humidity encourages the presence of mildew, a sticky substance secreted by aphids, which attacks plants.
That said, some wineries, respectful of nature and the environment, have decided to give it a go, without the use of insecticide or chemical products. The result? Some very well-made organic Champagnes, with undeniable gustatory qualities.
