SNAIL FARM France remains without a doubt the largest consumer of snails in the world. However, this gastropod, a key product in the country’s culinary heritage, is growing rarer in the French countryside, and over 80% of the snails consumed are now imported from Eastern Europe and Asia by food manufacturers.
Snail farmers in Haute-Marne produce local snails that are distinguished by their finesse and tenderness. Here you can meet the Hélix aspersa maxima, a very attractive horned beast.
